3 Easy homemade Thai dressing you need in your fridge.
Summer is here, woohoo. That means for the next few months (if we are really lucky) or weeks (if we are lucky) or days (we’ll take anything) we will be eating more BBQ and salads.
I love salads in the summer, don’t you?
There is nothing like sitting in a warm summer’s evening with a cold drink and some fresh salads for dinner, accompanied by something nice from the BBQ of course.
I thought I would put together a list of my favourite dressing for you. You can make these dressing ahead of time and keep them in the fridge. It will keep for a week or two, in the case of the peanut sauce I would portion them and freeze it. Just defrost it as and when you need them.
So, here are my 3 easy homemade Thai dressing.
1. Spicy and citrus dressing. From my Crispy tofu salad this dressing is so lovely and fresh. It is not as spicy as we would normally make it for our Thai salad. The addition of orange juice and olive oil makes it more fresh and summery.
2. Yellow beans and ginger dressing. From my BBQ red cabbage. This dressing from Kho Man Gai – Chicken and rice, is a perfect compliment for any grilled vegetable dish. The combination of yellow beans, ginger, garlic, coriander and chilli gives it a nice earthy flavour.
3. Peanut sauce. From My peanut sauce. What can I say about my peanut sauce apart there is always a few jar of it in my freezer! This creamy, crunchy and spicy sauce just goes with everything!
These dressing are great on any salads as well as a great sauce to serve along side your BBQ. These are just my suggestion on the recipes. They can also be suitable for vegetarian and vegan with just simple changing the chicken stock cube to vegetarian stock cube.
