Everyone has a friend called Dave -fact
As an added bonus, our friend Dave happens to have the best burger recipe, ever. When I asked him (after a couple of beers) if I could have the recipe for my book, he was more than happy to agree. These burgers are so easy and delicious you will never want to buy the readymade variety for your BBQ ever again.
I made them last year for our annual Murrin BBQ bonanza, complete with a build- your-own-burger bar. This had all sorts of extras, including bacon, fried onions, salads, beet root, pineapple, and even fried eggs. It proved a great hit. The recipe below is as recited to me by Dave!
You will need the below to makes 10
750g minced beef, not too lean but good quality (especially if you like your burger that bit rarer)
2 onions, finely chopped
100g mature cheddar, finely grated
100g mature cheddar, finely sliced (for topping – optional)
3 eggs, beaten
2 red chillies, deseeded and finely chopped
2 cloves of garlic, crushed
4tbsp finely chopped sundried tomatoes
3tbsp finely chopped chives
15 heaped tbsp fine breadcrumbs – use your loaf!
salt and pepper to season
Using a large bowl, add the breadcrumbs, garlic, chillies, sundried tomatoes, onion, chives and grated cheddar. Mix it all together thoroughly. Then add in the minced beef and egg, and season well with salt and pepper.
Using your hands, mix all the ingredients together. Divide the mixture into 10 equal parts. Shape each portion into a burger around 1.5 cm thick and 10-12 cm wide. Wrap the burgers in cling film and refrigerate for one hour. This helps them hold their shape when cooking.
Cook the burger to your liking. With about 1 minute to go, add the thinly sliced cheddar (if using) to the tops of the burgers so it begins to melt.
