Fried Chicken Waffle with Chilli and Soy Sauce Syrup

The first time I saw a photo of a fried chicken waffle sandwich I remembered thinking this is the most beautiful thing I’ve ever seen. Crispy fried chicken sitting on top of golden waffle and covered in maple syrup. it makes me hungry just thinking about it.  I kept promising myself that I will make it one day but it never happen.Then I was given a waffle making machine for Christmas. This was not a surprise gift as I always have a Christmas wish list (as well as birthday wish list) I hate that thing you have to do on Christmas morning when you open up the gifts in front of the person who gave it to you and you have to pretend that you like it (you all know what I mean).

I used to go “Yeah” when one of my ex boyfriends parents gave me a box of liquorice as part of my Christmas gift. I did this for years then one day I decided to tell her that I actually don’t care very much for liquorice and in fact I hated it. She said “why didn’t you say so!” and then never gave it to me again!

Anyway, I digress where was I? Ah yes, waffle machine.

I tell myself (again) that I am definitely going to make fried chicken waffle sandwich now that I have the machine. This never happen. until our friend Tim when on holiday to USA and he send me a photo of a fried chicken waffle sandwich and told me how great it was and that give me the kicked I needed.

The next day I did my fried chicken waffle sandwich but not without adding a little twist.

The result was amazing. I made a huge mess in the kitchen doing this (nothing new there).

To serve 4 you will need:

Waffle batter –  adapted from Jamie Oliver.

1, eggs
150ml, milk
110g, self raising flour
1tsp, baking powder
Pitch of salt
1tsp, garlic powder
2tbsp, Chopped fresh coriander
50g, unsalted butter melted

For the fried chicken

400g chicken breast mini fillet
100g Tempura flour you can get this from all major supermarket
40g Pakko
10g sesame seeds
250ml cold water
1Lt vegetable oil for frying

For the sauce

2tbsp oyster sauce
1/2 tbsp soy sauce
1/2 sweet say sauce
3tbsp maple syrup
1tsp chilli flake
1tsp garlic oil – you can get the recipe here or you can just fry the garlic in a bit of oil to brown it first before adding in the remaining ingredients.
1pinch, Chopped fresh coriander for garnish
1, deseeded chopped red chilli for garnish

Let’s cook!

Make the waffle by cracking the eggs into a bowl, add the milk and whisk to combine. Sift in the flour, baking powder and salt then whisk until fully combined. Add the cooled melted butter and stir it through the mixture. It’s important not to stir the mixture any more after this or your waffles may be tough.

Cooked the waffle in your waffle machine till golden and keep warm.

Heat the oil in a sauce pan to a medium heat

While you are waiting for the oil to heat make the sauce and the batter  by stirring together the batter ingredients adding in extra water if it is too thick.

Make the sauce by putting all the ingredients together in a pot and heat for 1 minute.

Coat the chicken in the batter and deep fry till golden brown. Remove (check that it is cooked) and drain on paper towels before serving.

Once you have your chicken and waffle Cooked coat the chicken in the sauce and served on top of the waffle garnish with coriander and chilli.
