I really wanted to do a Thai take on fish and chips, so played around for ages to get this recipe right. Let’s face it, it’s still one of the first things you think of in terms of traditional British food. We had an ‘English fish and chip shop’ in Bahrain. I can still remember the smell of vinegar when it hit the steaming hot fish and chips, all wrapped up in newspaper. Yum. I hope I have managed to capture the essence of this great British dish while adding a Thai twist of my own.
