I woke up to a very white morning today. Our first snow since we have moved to our new home and it is very pretty indeed.
I was very nervous about the school runs! 20 minutes drive on the snowy country road was not something I have done before. I made Mr M come with us, not sure why but I just feel safer with him in the car.
It turns out I need not worry at all, the road was well gritted and we were able to enjoy a beautiful country drive with all the snow covered hills on both side of the road. It is days like this that makes me grateful for what I have.
Anyway enough about how pretty snow can be! I was so hungry when I’ve got home. After hunting around the fridge, I’ve then decided that I am going to make these mini iced cinnamon rolls for breakfast.
We made these iced cinnamon goodness over the Christmas holiday and it was so yummy and delicious that you will not be able to resist having more than one.
Just in case you are thinking she cannot be eating iced cinnamon rolls for breakfast? When I say breakfast I am taking about ten in the morning.
I am not a big Breakfast person. I used to struggle when I had a 9-5 Job in an office where I have to look and be very awake. I would sit there in front of my computer and hope that no one will talk to me till at lease 11am. And if they were to talk to me they would soon discovered that I was there in body but my brain was still happily tuck away in bed.
Any way as I am not really awake in the morning I could never bring myself to eat breakfast. My breakfast is everyone else’s elevenses. That is when my stomach wakes up.
This quick (cheat) mini iced cinnamon roll is the perfect thing for my breakfast/elevenses. All you need is 5 ingredients and 20 minutes to make. Just pop in to the shop and grab these ingredients on your way home today and just imagine yourself with your Sunday newspaper and a cup of coffee eating these warm and sweet delicious treat this weekend.
You will need :
1 pack, Jus Roll Croissants – makes 6 croissants (other brands are available)
1tsp, ground cinnamon
2tbsp, soft light brown sugar
3tbsp, icing sugar
Preheat the oven to 180c. Open the can of ready to roll croissants of your choice and lay them flat on a lightly dusted work top (with flour not actual dust)
Now the difficult part!! Pinch together the diagonal dotted lines so that you will have 1 long sheet of pastry.
Make sure to do both side. Then break the pastry into 3 sheets from the straight lines.
Make the cinnamon sugar by mixing the sugar and cinnamon together then sprinkle it on to the pastry. How much is down to your liking.
Roll the pastry.
Cut each pastry roll into 3 and place in a lined muffin tray. Bake for 12- 15 minutes. Until golden brown.
Remove the pastry and leave to cool. I usually lose my patient to wait by about 10 minutes.
Mixed the icing sugar and water together to form a paste and drizzle it over your mini cinnamon roll.
Then sit back and enjoy your Sunday paper eating these sticky mini cinnamon rolls.
Note: You can also use chocolate spread if you do not like cinnamon.
