Prawns with Mango and Cranberries Salsa

We do not mention the word Christmas in our house till after 14th November, Mr M’s birthday. So as Emma-Jane is now singing Christmas songs and we have watched our first Christmas movie this weekend. I do feel like it is time that I start to think about Christmas.

We (I) have invited a few of our neighbours for a Christmas Eve drinks and nibbles this year and I have pondered over what I will be making for them. I live in a very foodie street. Our neighbours are great cooks and entertain all the time. No pressure on me then!

I wanted to make something that is easy, affordable and delicious. I don’t want to spend the evening chain to the kitchen. this is the only party I am going to this year. I want to dress up and look nice and enjoy myself too.

Over the next 12 days I will be posting a canapé a day. let’s call it the 12 days of Canapés. I promised these will be easy and affordable to make.

and here is day 1.

Prawns with Mango and Cranberries Salsa.

You will need:   Makes 20

50g Fresh Cranberries
100g Chopped fresh mango
1tbs Chopped fresh coriander
1tsp Mild chilli powder (more if you like it hot)
1/2tsp sugar
1tbs Soy sauce
2tbs fresh lemon juice
20 Cooked Prawns

Let’s cook!

There is not really much to do really. All you need to do is put all the ingredient apart from the prawns into a bowl and give it a good mix. Taste to your liking adjusting as required. It should taste sour follow by hot then sweet.

I serve these by putting a bite full of the salsa on a plastic Chinese soup spoon that I’ve got on Amazon topped with the cooked prawns.
