Apple Cake with Garam Masala

For the cake
  • 450g cooking apple – peeled and cut into cubeabout 3 apples
  • 240ml vegetable oil
  • 250g plain flour
  • 1tsp salt
  • 1tsp sweet gram masala
  • 250g soft brown sugar
  • 1tsp baking powder
  • 3 eggs
  • 1tsp Vanila bean paste
for the caramel sauce
  • 100g unsalted butter
  • 125g soft brown sugar
  • 60ml milk
  1. Preheat the oven to 180c. Grease a 9×13 baking dish. As I mention before this is a really simple recipe so all you have to do is beat the oil, sugar,eggs, masala and vanilla together in a large bowl.
  2. Add in the flour, salt and baking powder – mix well, then stir in the cut apples. Give it a good mix and pour into the baking dish, bake for 50-55 minutes. Till it is nice and brown and dry when poke with a stick. leave to cool in the baking dish.
  3. Once you got the cake out from the oven, make the sauce by combining all the ingredients together in a saucepan. Cook on medium heat till all the ingredients are melted and combined. making sure to stir all the time. Then bring it to the boil for 2 minutes with out stirring.
  4. Poke lots of holes on the cake before it get too cold and pour the sauce all over the cake. This way it will soak into the cake and make it lovely and moist. Leave to cool completely before cutting. If you can wait that long.
