Apple Cake with Sweet Garam Masala and Caramel Sauce

There are apples every where at the moment. It is only right that I’d make an apple cake with them. An Apple cake with Sweet Garam Masala that is covered in caramel sauce! It is a hard job sometime being a food blogger and have to try to make yummy recipe. This Apple cake is very easy to make and I prefer to use cooking apples for this as it give s it a nice tang. I often make this cake, portions it and freeze for when ever I fancy a slice. Serve as it is or with Ice cream, cream or custard.

For the cake
  • 450 g cooking apple - peeled and cut into cube about 3 apples
  • 240 ml vegetable oil
  • 250 g plain flour
  • 1 tsp salt
  • 1 tsp sweet gram masala
  • 250 g soft brown sugar
  • 1 tsp baking powder
  • 3 eggs
  • 1 tsp Vanila bean paste
for the caramel sauce
  • 100 g unsalted butter
  • 125 g soft brown sugar
  • 60 ml milk

Apple Cake with Sweet Garam Masala and Caramel Sauce
Instructions
  1. Preheat the oven to 180c. Grease a 9x13 baking dish. As I mention before this is a really simple recipe so all you have to do is beat the oil, sugar,eggs, Masala and vanilla together in a large bowl.
  2. Add in the flour, salt and baking powder - mix well, then stir in the cut apples. Give it a good mix and pour into the baking dish, bake for 50-55 minutes. Till it is nice and brown and dry when poke with a stick. leave to cool in the baking dish.
  3. Once you got the cake out from the oven, make the sauce by combining all the ingredients together in a saucepan. Cook on medium heat till all the ingredients are melted and combined. making sure to stir all the time. Then bring it to the boil for 2 minutes with out stirring.
  4. Poke lots of holes on the cake before it get too cold and pour the sauce all over the cake. This way it will soak into the cake and make it lovely and moist. Leave to cool completely before cutting. If you can wait that long.
