Banana in Sweet Coconut Milk
Thai version of Banana in Custard. Easy to make from basic ingredients.

First toast the garnishes in a dry pan till nice and golden.
Heat the coconut milk, palm sugar and sea salt in a saucepan to simmer for 5 mintues. Taste, it should be sweet and creamy with a hint of saltiness. A bit like salted caramel. Adjusting as require.
Add sliced banana to the coconut milk and simmer fore a few minutes, depending on how ripe your banana is. You don’t want to cook the banana to mush.
Served top with toasted seeds.
