Banana in Sweet Coconut Milk
Thai version of Banana in Custard. Easy to make from basic ingredients.

Ingredients
  • 2 bananasmore if there are small
  • 1400ml can coconut milk
  • 3tbs palm sugaror soft brown
  • 1pinch sea salt
Garnish
  • 1tbs sesame seeds
  • 1tbs almond flakes
  • 1tbs pumpkin seeds
Instructions
  1. First toast the garnishes in a dry pan till nice and golden.
  2. Heat the coconut milk, palm sugar and sea salt in a saucepan to simmer for 5 mintues. Taste, it should be sweet and creamy with a hint of saltiness. A bit like salted caramel. Adjusting as require.
  3. Add sliced banana to the coconut milk and simmer fore a few minutes, depending on how ripe your banana is. You don’t want to cook the banana to mush.
  4. Served top with toasted seeds.
