Do you have a dish that just take you back to your childhood? One that only Mum can make them? Every time your mum make it for you it like a warm hug? Well this is it for me. My interpretation of it.
My Mum used to make me this dish when we were still living in Thailand. I called it Yellow salty Pork, as the colour of the turmeric would make it yellow. I asked my mum the other day how she made it and she has given me her recipe. Which is pretty much some pork belly, salt, turmeric and water and cook it.
When I asked her how much of each ingredients do I use? her replied was just “so that it taste good”!
With that great advice I started to recreate my childhood dish. It was nice and yummy, but it was missing that little magic something that a dish has when your mum cooks it for you.
There was no way I was going to be able to make the dish taste as good as my mum’s. Instead I have made an interpretation of the dish.
I used shoulder of pork instead of pork belly adding lemongrass and BBQ rather than boil. We have had this a few times now and we all love it. although I have called this recipe a BBQ Pork, I have mostly cooked this on a griddle over a stove top and it works perfectly.
We have had it with Sticky rice, in a wrap even in a baguette with some salad for lunch. With summer approaching I feel that this dish with be on our BBQ most week.
The below recipe served 4-6 people depending on what you are having it with.
