BBQ Sticky Tamarind Glaze Ribs
These BBQ ribs is everything you want in a rib recipe, it is sticky, sweet, spicy – it’s finger licking good.

For the marinade
  • 2 rack of baby back ribs
  • 1tbs coriander seedslightly toasted and crushed
  • 10 cloves garlicpeeled and crushed
  • 130g pack fresh coriandersave about 10g for the glaze
  • 2tbs palm sugar
  • 2tbs fish sauce
  • 2tbs olive oil
For the glaze
  • 100g palm sugar
  • 50g sugar
  • 5tbs tamarind
  • 1tbs white wine vinegar
  • 2tbs pickle onion liquid
  • 10g chopped coriander
  • 2tbs water
  • 1tsp chilli flakesoptional
Marinade the ribs
  1. Place all the marinade ingredients together in a large tray. Big enough to put your ribs to sleep in. Mix well and then add the ribs in, give it a good massage. Cover and keep in the fridge over night.
Make the glaze
  1. Add all the ingredients together in a saucepan, apart from the coriander and bring to the boil. Simmer for 1-2 minutes, till it has thicken. add in the coriander at the end. Taste and adjust as required. it should be sweet first then sour, salty with a hit of chilli.
Let’s cook
  1. Remove the marinated ribs out of the fridge to get to room temperature before you cook it. BBQ the ribs slowly on the BBQ using the indirect heat method. Cook the ribs for 4-5 hours depending on the size, it should be falling of the bone when done. Glaze the ribs every 10 minutes towards the last half hour of cooking. Pour any remaining glaze over the ribs once on the plate.
