This Thai Pork Kofta will be your new family favourite this summer. It is my take on the middle earthen Kofta. Patties of mince pork wrapped in homemade flatbread served with Thai cucumber pickle relish and top with Spicy yoghurt. Yummmm
Yes Summer is finally here and the kids are off from school! and it is that time of year where we take to our BBQ. This Thai Pork Kofta is a great fun dish to make and enjoy by both adults and kids.
New dishes with kids does not have to be something too exotic that they will take one look at it and goes “not a chance” It can be fun and familiar like this Pork Kofta.
My Thai Pork Kofta looks like a burger and what kids does not like burger (apart from EmJ!!) it goes on a flatbread that they can wrap and make a mess with. I use my spiralizer to spiralized the cucumber for the pickle, simply because it was fun for Emj to help make and eat. She also help makes the flatbread but was not so keen or making the Kofta.
I’ve serve my Thai Pork Kofta with flatbread adapted from Jamie Oliver flatbread garlic bread recipe and it was perfect and easy to do, EmJ had so much fun making it.
I am sure you all know I like to have chilli in pretty much everything I eat. So to make sure I had something spicy in my wrap I added Sriracha chill sauce into yoghurt and some chilli in the pickle but you can leave it, if your children are not keen on hot food.
But if they are feeling brave just let them add in a bit of chilli sauce to the yoghurt. It will make them feel like they have manage to eat something spicy and will be more willing to try again.
Making sure you save some without the chilli sauce just in case.
I know that when you read down on how to make this recipe you are going to think it is too much to do. I promised you it is not. I have made this after I have come back from work before and it is really does not take to much time. There are a lot of component to the dish but they all only take a few minutes to make.
This recipe is not only delicious, easy to make with kids it is also very cheap to do.
