We all love eating with our hands, especially kids. This Thai inspired Chicken and Crispy Noodles Lettuce Wrap is another perfect dish to get kids to try something new.

You know how every country has its own adapted cuisine? A foreign dish that has become their own. I’m not sure if this ever begin as a Thai dish or not, but you can get this dish in most Thai restaurants in the UK and it is one of my dinner party favourites. It is perfect for when you have dinner party that kids are included.

This dish has a guaranty Wow factor for both kid and grown up alike. You can make this ahead of the party giving you more time with your guests. (and very easy on the pocket too). We have this on a Friday night all the time as Emj loves it.

I prefer to use chicken for this recipe but you can substitute this with any meat or prawns. I often make it with mushroom for my vegetarian friends.  I would cut the chicken into cubes then put it into food processor to mince. We would normally chop the chicken with a meat cleaver in the restaurant so only coarsely minced it please.

Deep frying the noodle is the dangerous part of cooking this dish. I cannot tell you enough to take VERY good care in doing this. DO NOT LET THE CHILDREN HELP WITH THIS PART .

You will need very hot oil and the noodles will expand more than double in size. When I was showing my friend how to cook this dish she did said that if she did not see how hot the oil is and how much the noodles expand it would have given her a fright. Because of what she said I have made a video for you to see how it looks.

 

You can get the kids involved in the preparation of the lettuce and measuring up the sauces.  Just not the noodles. Do get them to see the before and after, they’ll like that.

Emj always help to do the garlic when I cook. It is only because we have picked up these cool gadgets from our visit to the Garlic Farm on the Isle of Wight. The first one is the garlic peeler it is so easy and effective to use.(keep kids busy for hours!) The second which I must admit I use it a lot is the garlic crusher. I much prefer these to the garlic press. Anyhow it is a cool and safe gadgets for kids to use in the kitchen.

You can cooked the chicken ahead of time and warm it up in the microwave when you are ready to served. Same goes for the noodles, once fried let it cool in a dry place and you can keep it in un airtight container. No need to heat them up. Prep the lettuce before hand and you have everything ready for when your guest arrives. Simples.

Ingredients
For the chicken
  • 350 g chicken I used thighs, you can use breast if you prefer.
  • 1 tbs olive oil
  • 2.5 tbs oyster sauce
  • 1 tbs Soy Sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 30 ml water 4 tbs or a dash as I'd call it
  • 2 clove garlic or 1 tsp garlic powder
  • 1 tsp chill flakes optional
Remaining ingredients
  • 1/2 head iceberg lettuce or any lettuce you prefer
  • 1 lt vegetable oil for deep fry
  • 40 g dried rice vermicelli noodles

Instructions
Fry the noodles
  1. Heat the oil in a deep saucepan till hot enough that when you drop a small piece of noodle it puffed up right away.
  2. Drop the dried noodles in small amount at a time into the hot oil (please take care) remove the noodle with a slotted spoons as soon as the noodle has puffed. this will only take 3-4 second (see video) have everything ready to hand when cooking the noodles. Drain on kitchen paper and leave the noodle to cool while you get everything else ready.
Prepare the lettuce
  1. Not much I can tell you on this really. You want to keep the lettuce in a wrap able shape as possible, like a cup. I simply remove the core (bottom) of the iceberg and cut it in half. Gently remove all the leaves and soak them in ice cold water to crisp. Drain and arrange them on a plate ready. This is a great job for the kids to do.
Chicken
  1. Cut the chicken in to small cubes and mince it in a food processor. Heat up the oil in a wok or saucepan and add in the chicken, cook for few minutes, so that the chicken are just cooked.
  2. Add in the remaining ingredients for the chicken and give it a good mix, cook for about 5 more minutes. Taste and adjust as require.
  3. Serve each the chicken and noodles in a bowl accompany by the iceberg and let the kids (and grown up) have all the fun putting everything together. We always have a side of sweet chilli sauce with ours as it's Emj favourite.
