What is chicken satay or Satay?  

Well, good old Wikipedia will tell you that satay is a dish of marinated,  skewered, grilled meat, seafood or vegetable

Which basically means there isn’t a right or wrong way to make one!As long as they are on a stick. 

I have worked in several Thai restaurants and none made it in the same way, but all tasted great.

Why is Satay so great? Because everything taste better on a stick! It is perfect for kids, great on BBQ, for lunch, brunch or dinner it is just great.

Satay is normally served with peanut sauce. I know there are more and more people who are allergic to peanut so do check out my PeaNot sauce for alternative to PeaNut sauce (see what I did there?) Both recipes are on my blog. If your kids does not like spicy food try adding less curry paste or serve it with Sweet chilli sauce. Emj prefer her satay with sweet chilli sauce, in fact she prefer everything with sweet chilli sauce.  

In Thailand we serve our Satay with peanut sauce, arjard (lightly pickled cucumber relish) and cubes of bread.

Ingredients
  • 600 g boneless chicken thighs
  • 6 tbsp coconut milk
  • 2 Lemongrass cut to 2 inches and bashed
  • 5 kaffir lime leaves
  • 1 1/2 tbsp medium curry powder
  • 2 tbsp Honey
  • 1 tsp salt
  • 1/2 tbsp Turmeric powder
  • 20 bbq skewers

Instructions
  1. First make the marinade. Put all the ingredients (apart from the chicken) together and give it a good mix. I prefer to use a large ziplock bags, less messy and easier for kids to do. A large bowl is great too.
  2. Cut the chicken thighs into bite size cubes. Add to the marinate and die it a good mix. Take a pice of chicken and cook on a pan to taste. Adjust as require.
  3. Marinate the chicken for at least 4 hours preferably overnight. Skewe the chicken onto the skewer. Cook on a BBQ or under a grill. Make sure it is cooked through, which shouldn't take longer than 20 minutes or so.Depending on the size of the chicken
  4. Serve with peanut sauce,Arjard and crusty bread.
Recipe Notes

Meal prep: marinate the chicken and freeze, defrost as needed. 

Tips for quick weekday meal, turn your satay into a tray bake. Add the chicken with some vegetable and cook the in the oven and pour some peanut sauce over.
