  • 6tbsp coconut milk
  • 2 Lemongrasscut to 2 inches and bashed
  • 5 kaffir lime leaves
  • 1 1/2tbsp medium curry powder

  • 1tsp salt

  1. First make the marinade. Put all the ingredients (apart from the chicken) together and give it a good mix. I prefer to use a large ziplock bags, less messy and easier for kids to do. A large bowl is great too.
  2. Cut the chicken thighs into bite size cubes. Add to the marinate and die it a good mix. Take a pice of chicken and cook on a pan to taste. Adjust as require.
  3. Marinate the chicken for at least 4 hours preferably overnight. Skewe the chicken onto the skewer. Cook on a BBQ or under a grill. Make sure it is cooked through, which shouldn’t take longer than 20 minutes or so.Depending on the size of the chicken
  4. Serve with peanut sauce,Arjard and crusty bread.
Recipe Notes
