This Chicken with Cashew Nuts recipe is probably one of the first few dishes I learnt to cook when I left home.

It is so simple and is the base to most stir fry dishes. I think if you can master Chicken and Cashew Nut then you have master stir-fry. it has the basic sauce base that you can make anything out of it. Add ginger and mushroom to make chicken with ginger. Add chilli, garlic and basil to make chicken with chilli and basil. Serve with Thai rice and you never need to reach for the take away menu again.

  • 500 g chicken breast sliced
  • 5 spring onions sliced
  • 100 g roasted cashew nuts
  • 200 g tin pineapple chunks
  • 1 onion sliced
  • 2 tbsp oyster sauce
  • 1 tbsp Soy Sauce
  • 1/2 tbsp dark soy sauce
  • 1/2 tsp sugar
  • 4 dried chillies (optional) deseeded and cut into 1 inch pieces
  • 50 ml cool boiled water more if the dish is too dry
  • pinch ground white pepper

Instructions
  1. Heat up some oil in a wok (any oil will do, I use vegetable). When the wok is hot add in the chicken. Cook for about 5 minutes, until just cooked.
  2. Add in all of the sauces, sugar and white pepper and give it a stir. Cook for a further 3 minutes then add in the reminding ingredients.
  3. Check you're happy with the flavour and serve up with Thai jasmine rice.
Recipe Notes
Take care with the chilli. Use just enough to add a bit of spice to the dish rather than make it hot.
This recipe is also great with fried soft tofu.
