  • 500g chicken breastsliced
  • 5 spring onionssliced
  • 100g roasted cashew nuts
  • 200g tin pineapple chunks
  • 1 onionsliced
  • 2tbsp oyster sauce
  • 1tbsp Soy Sauce
  • 1/2 tbsp dark soy sauce
  • 1/2tsp sugar
  • 4 dried chillies (optional)deseeded and cut into 1 inch pieces
  • 50ml cool boiled watermore if the dish is too dry
  • pinch ground white pepper
  1. Heat up some oil in a wok (any oil will do, I use vegetable). When the wok is hot add in the chicken. Cook for about 5 minutes, until just cooked.
  2. Add in all of the sauces, sugar and white pepper and give it a stir. Cook for a further 3 minutes then add in the reminding ingredients.
  3. Check you’re happy with the flavour and serve up with Thai jasmine rice.
Recipe Notes
Take care with the chilli. Use just enough to add a bit of spice to the dish rather than make it hot.
This recipe is also great with fried soft tofu.
