Crispy Basa fillets with Chilli and Basil

Lovely white fillets of Basa that is fried till crispy and tossed in chilli and basil, I mean what is not to love.

Basa fillet(vietnamese cobbler)  is a very affordable fish that is available in most supermarket fresh and frozen. It has firm white meat so it is

perfect for stir fry.

it might sounds like a lot of work to deep fried the fish first but honestly it takes no time at all to make this dish.

As with all Thai recipes, make sure you prepare all the ingredients first and have it ready before cooking.

Thai Chilli and basil stir fried with crispy fish fillets.
Crispy Basa fillets with Chilli and Basil

Ingredients
  • 4 Fresh Basa Fillets sliced as per photo
  • 1 red onion peeled and sliced
  • 2 cloves garlic peeled and crushed
  • 2 bird's eye chilli - crushed more or less to your liking
  • 100 g Fine green beans clean and cut to bite size
  • 1/2 tbsp fish sauce
  • 2 tbsp oyster sauce
  • 1 tbsp Soy Sauce
  • 1/2 tbsp dark soy sauce
  • 100 ml cool boiled water
  • 1 tsp sugar
  • 2 red chilli sliced
  • 1 handful Thai basil
  • 4 tbsp corn flour
  • 1/2 lt vegetable oil for deep fry

Instructions
  1. As with all Thai recipes - first make sure you have all the ingredients ready to hand. You can if you want to, measure out all the sauces together in a bowl and have it ready.
  2. Then heat the oil in a saucepan suitable for deep fried to medium - hot about 180c. While the oil is heating dry the sliced fish and coat in the corn flour. Once the oil is ready, fry the fish in batches till cooked. Should only take about 3-4 minutes. Remove the cooked fish and drain on kitchen paper.
  3. Once the fish are all cooked. Add a drop of oil (any) into a wok with the crushed garlic and chilli then turn the heat on and cook for 1 minutes. Just to soft it but not brown.
  4. Add in the onion, green beans, sugar and all of the sauces and cook for a few minutes until the beans are just cooked. Add in the water, give it a good stir and taste and adjust to your liking.
  5. Once you are happy add in the cooked fish, red chilli and basil. Give it a good stir to ensure that the sauce is nicely coating the fish. Serve hot with Thai Steamed rice.
