Crispy Tofu Salad
This salad will serve 2 as a main or 4 as a side.

For the dressing
  • 3tbsp fresh lime juiceAbout 2 limes
  • 2tbsp Fresh orange juiceAbout 1 orange
  • 1clove garlic – peeled
  • 1pinch coriander
  • 2 small chilli
  • 2tbs sweet chilli sauce
  • 1tbs Honey
  • 2tbs olive oil
For the salad
  • 1bag young baby leaves salad
  • 1pinch coriander leaves
  • 10 leaves fresh mint
  • 10leaves Thai basil
  • g Tofu sheetsor fried soft tofu
  1. in a small food processor or blender, crush the garlic, chilli and coriander.
  2. add in the orange juice, lime juice, sweet chilli and honey and give it another quick blend
  3. add in olive oil and a final mixed, teste and adjust as require.
  4. torn the coriander leaves, mint leaves and Thai basil and add it to a bag of ready made baby salad leaves. arrange on serving dish
  5. fried the tofu in vegetable oil till crispy, drain on kitchen paper and leave to cool before adding to the salad.
  6. serve the salad with the dressing on the side.
