To me Paella reminds me of Spain. I feel like I am on holiday every time I have a Paella, It’s like sunshine on a plate. This version of Chicken And Seafood Paella might not be the traditional way of making Paella but it is easy and kids friendly. And you know I am all about getting kids to try new recipes. EmJ calls this “yellow rice” and we would have it at least once a month. Please feel free to change the protein to suit. I have use chicken wings, pork belly basically any bits I have in the fridge. I have made this paella recipe using both Paella rice and risotto rice and they both turn out great so I won’t worry too much is you can not find Paella rice. You might also notice that I did not use saffron in this recipe, that is because I can not afford it. Enjoy.
