Grilled Vegetable Salad with Spicy Creamy Thai Avocado Dressing

Grilled Vegetable Salad is a perfect salad in our house. MrM does not like “salad” as he prefer his vegetable cooked. EmJ does not like “cooked” vegetable as she prefer it raw! A Grilled Vegetable Salad is what is keeping the peace in my house.

I am sure you do not need me to tell you how to grilled vegetable but just incase you are thinking this is too easy to do! Well it is.

Pleas feel free to use any vegetable you like or is in season for your Grilled Vegetable Salad. The possibility are endless, there is not much that you can not grilled. In fact, I can not think of one. I would make sure to get as many different colours of vegetable as you can. It just prettier, like a rainbow on a plate.

The important thing to me on a salad of any kind is the dressing. I find my Spicy Creamy Thai Avocado Dressing to be perfect for a grilled salad. The spiciness from the dressing just balances everything out nicely. Of course EmJ has her salad with Sweet Chilli sauce, like she does with everything she eats.

Oh, I cooked my salad on these Cast iron griddle. It sit perfectly over my gas stove.

Great winter salad that is healthy and easy to make.
Grilled Vegetable Salad with Spicy Creamy Thai Avocado Dressing

Ingredients
  • 8 small carrots cleaned and keep whole
  • 1 small aubergine sliced
  • 1 courgette sliced
  • 1 yellow pepper sliced
  • 8 small tomatoes
  • 1 sweet potatoes thinly sliced
  • 1/2 Red Cabbage sliced
  • 1 tbs olive oil
  • 1 pinch salt and pepper
  • 1 pinch dry mixed herb
Prep Time 10 minutes
Cook Time 15 minutes

Instructions
  1. In a large bowl add all the ingredients together and give it a good mix. Grilled the vegetable on a hot griddle until cook to your liking. I prefer it to be on the crunch side.
  2. Arrange the salad on a plater and serve with my Spicy Creamy Thai Avocado dressing. Yum.
