Homemade Fortune Cookies
Homemade fortune cookies that is easy to make and perfect for all occasion. Make them for Mother’s day, Valentine or even Christmas. Perfect with a cup of tea too.

  • 2 eggs white
  • 1tsp vanila extract
  • 1tsp almond extract
  • 3tbs vegetable oil
  • 100g plain flour
  • 2tsp caster sugar
  • 2tsp cold water
  1. First thing first – write your fortune, jokes or messages. Get your kids to help (if you have them) We did ours on line paper, write in the middle of the line and you can cut it to size. you don’t want them to big as it will need to fit in the cookies. Mr M’s joke was a bit long, I just fold them up.
  2. Beat together the egg whites, vanilla extract, almond extract, oil and cold water in a bowl till frothy. About 1 minute. Add plain flour, cornflour, sugar and a good pinch of salt to the mix. Whisk till smooth, like pan cakebatter consistency.
  3. Chill the batter while you heat the oven to 180C and line a baking sheet with baking parchment. Draw 2 circle on the paper so that you can have a guideline when you make the cookies.
  4. Put 1 tsp of the batter on to the baking sheet, using the back of the spoon to swirl the batter out to make a circle. Slightly oil the spoon so that the batter don’t stick. Only make 2 cookies at a time. Bake for 4 to 6 minutes. keep an eye on it, remove as soon as the batter starting to change colour.
  5. You need to be really fast now, with a palette or table knife remove 1 cookie. Put the message in the middle of the circle and fold it in half. Press the folded side of the cookie on a rim of a bowl and push it down by the 2 corners to form a fortune cookie sharpe. hold for a few second. Put the folded cookie in a muffin tin (or something similar) so that it will hold the shape as it cool. This folding process should that you no more than 6 second to do. Once the cookie are cool you will not be able to shape it, so you need to move fast.
  6. Repeat with the rest of the batter.

Do have everything ready when you are folding the cookies. It takes no time at all for the cookie to cool.

Remember the cookie will be very hot (as it has just come out from the oven) You should not burn yourself if you keep it moving in your hand. Saying that, please take care.

DO NOT let the children fold the cookies please!! it is too hot for their hands. They can write the message and make the batter but not fold them.
