Thai Kale Omelette is a perfect weekend brunch and is one of Emj’s favourite. When she asked me if I can make one for her at the weekend after swimming I was more than happy to obliged. I mean she is asking to have kale! how do I say no to that.

Thai Kale Omelette is a perfect recipe to cook with your kids (or without). Emj normally de-stalk the kale for me and she loves cutting it up in a herb cutter   It does take a while for her to cut up all the kale so I normally chop them up on a cutting board at the same time. You can also you a food processor to do this just make sure you do not let it turn into mush. you want it finely chopped.

This is a one pan recipe so, less washing! my kind of recipe.

Thai Kale Omelette is an easy weekend brunch recipe that is perfect for all the family.

  • 200 g kale
  • 6 eggs
  • 1 tbs Soy Sauce
  • Cooking spray oil
  • black pepper

Thai Kale Omelette
Instructions
  1. First job for the kids is to de-stalk the kale. Once de-stalked then give them a fine chop.
  2. In a pan large enough to cook 6 eggs, spray the pan a few time with cooking spray oil. Add in the kale and cook slowly till soft, not brown. remove from heat and let it cool slightly.
  3. Beat 6 eggs in a large bowl, season with Soy sauce and a pinch of black pepper. Add the kale to the beaten eggs, give it a good mix.
  4. Wipe the pan with kitchen paper and heat to medium heat. Spray the pan with oil and pour the Kale and eggs mixture into the pan. Cook till nice and brown on one side then turn the omelette over to cook the other side. Serve with your favourite chilli sauce, ketchup or brown sauce.
