Ingredients
  • 200g kale
  • 6 eggs
  • 1tbs Soy Sauce
  • Cooking spray oil
  • black pepper
Instructions
  1. First job for the kids is to de-stalk the kale. Once de-stalked then give them a fine chop.
  2. In a pan large enough to cook 6 eggs, spray the pan a few time with cooking spray oil. Add in the kale and cook slowly till soft, not brown. remove from heat and let it cool slightly.
  3. Beat 6 eggs in a large bowl, season with Soy sauce and a pinch of black pepper. Add the kale to the beaten eggs, give it a good mix.
  4. Wipe the pan with kitchen paper and heat to medium heat. Spray the pan with oil and pour the Kale and eggs mixture into the pan. Cook till nice and brown on one side then turn the omelette over to cook the other side. Serve with your favourite chilli sauce, ketchup or brown sauce.
