Easy Leftover Fried Rice recipe using what you have leftover to create another delicious dinner.

Ingredients
  • 500g cooked rice
  • 3tbsp Soy Sauce
  • 2tbsp dark soy sauce
  • 2tbsp katjap manis
  • 1tsp salt and white pepper
  • 2tbsp oyster sauce
  • 1tbsp vegetable oil
  • 300g Mixed vegetableI used mixed of frozen Peas and Sweet corn
  • 400g Cooked chickenOr how ever much you have leftover
  • 1large onion
Instructions
  1. Firstly have all your ingredients to hand, it makes it a lot easier when you are cooking fried rice. In a large (non metal) bowl mix the cooked rice and the dark soy sauce together. ensuring that the soy sauce covers the rice. Heat the rice in the microwave for 2 minutes, till it is warm.
  2. Heat the vegetable oil in a wok – Medium heat – add in the chicken, onion and vegetable cooked till it is warm through. Season with oyster sauce.
  3. Add in the rice and the rest of the ingredients and give it all a good stir. Remember you can always turn the heat down when you are trying to mix everything together. Taste and adjust to your taste. Enjoy.

Make sure your wok is large enough for all the ingredients.
