Meatloaf

Meatloaf was a recipe that have really surprised me! I really did not think I would enjoy this recipe, but I though if I am telling children to try new recipes then I have to do the same. Right?

To me Meatloaf is an American recipe. I think this is because of all the American TV shows I have ever watch always seems to mention it. And for that reason I am putting Meatloaf as my first American recipe for the “Kids Eat Club” Which means you can get your PDF – Printable – Meatloaf

Now back to my Meatloaf recipe. I have never eaten or cook Meatloaf before so I did what everyone would do and Google the recipe. Then I discover that they was not one Meatloaf recipe that was the same. Everyone have their own family recipe and every recipe had something  different in them.

So here is “my family recipe” I picked all the ingredients that I like and add them together to make my own and I think it is pretty awesome recipe. This recipe end up feeding 6 people, but the left over are great in a sandwich the next day.

For the Meatloaf
  • 500 g mince pork
  • 500 g mince beef
  • 14 slices unsmoked streaky bacon
  • 2 sticks celery finely chopped
  • 2 carrots finely chopped
  • 2 onion finely chopped
  • 100 g grated cheddar cheese
  • 3 cloves garlic minced
  • 150 g breadcrumb
  • 2 eggs
  • 100 ml milk
  • 1 tbsp dried parsley
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp tobacco
  • 1 tbsp olive oil
for the sauce
  • 250 ml ketchup
  • 70 g light brown sugar
  • 120 ml white wine vinegar
  • 1/2 tbsp Sriracha chilli sauce optional

Instructions
  1. Preheat the over to 180c. In a frying pan cook all the vegetable (garlic, onion, celery and carrot) till soft but not brown. Leave to cool.
  2. in a large bowl combine both of the mince and the cooked vegetable. Add in the rest of the Meatloaf ingredients ensuring that are well combined.
  3. Make the sauce by adding all the sauce ingredients in a saucepan. bring to the boil and simmer for 5 minutes.
  4. Line a baking sheet with parchment paper. Put the Meatloaf mixture on to the baking sheet and form into a loaf shape. Brush the loaf with a bit of the sauce and line the bacon over the top to cover the loaf.
  5. Bake in the oven for60 to 80 minute. check the the meat are cooked through. Serve with the sauce and jacket potatoes and green vegetable.
Recipe Notes

Put the onion, garlic, celery and carrots in a food processor and pulse until finely minced.
