Easy, yummy and easy on the pocket Meatloaf recipe. Wrapped in Bacon and coated in sweet and tangy sauce. Serve with potatoes to make a perfect family meal.

For the Meatloaf
  • 500g mince pork
  • 500g mince beef
  • 14slices unsmoked streaky bacon
  • 2sticks celeryfinely chopped
  • 2 carrotsfinely chopped
  • 2 onionfinely chopped
  • 100g grated cheddar cheese
  • 3cloves garlicminced
  • 150g breadcrumb
  • 2 eggs
  • 100ml milk
  • 1tbsp dried parsley
  • 1tbsp Dijon mustard
  • 1tbsp Worcestershire sauce
  • 1/2tbsp tobasco
  • 1tbsp olive oil
for the sauce
  • 250ml ketchup
  • 70g light brown sugar
  • 120ml white wine vinegar
  • 1/2tbsp Sriracha chilli sauceoptional
  1. Preheat the over to 180c. In a frying pan cook all the vegetable (garlic, onion, celery and carrot) till soft but not brown. Leave to cool.
  2. in a large bowl combine both of the mince and the cooked vegetable. Add in the rest of the Meatloaf ingredients ensuring that are well combined.
  3. Make the sauce by adding all the sauce ingredients in a saucepan. bring to the boil and simmer for 5 minutes.
  4. Line a baking sheet with parchment paper. Put the Meatloaf mixture on to the baking sheet and form into a loaf shape. Brush the loaf with a bit of the sauce and line the bacon over the top to cover the loaf.
  5. Bake in the oven for60 to 80 minute. check the the meat are cooked through. Serve with the sauce and jacket potatoes and green vegetable.
Recipe Notes

Put the onion, garlic, celery and carrots in a food processor and pulse until finely minced.
