Pea Soup with Candy Bacon
Easy and delicious Pea soup with naughty candied bacon.

Ingredients
For the Pea Soup
  • 250g potatoescut in to small cubes
  • 1 oniondiced
  • 50g butter
  • 400g frozen peas
  • 600ml stockchicken or vegetable. It is up to you, I used chicken
  • 150ml semi-skimmed milk
  • pinch salt and pepper
For the Candied Bacon
  • 12slices unsmoked streaky bacon
  • 3tbsp maple syrup
  • 3tbsp brown sugar
Instructions
  1. First marinated the bacon by mixing together the bacon, maple syrup and brown sugar for a half hour while you are making the soup. Preheat the oven to 190c.
  2. Melt the butter in a thick or heavy base pot. Stir in the onion and potatoes cook on low to medium heat with the lid on until they are soft but not brown. Keep an eye on them and keep stirring.
  3. Add in the peas and stock and give it a good mix seasoned well with salt and pepper. Bring to the boil then turn the heat down and simmer for 15-20 minutes.
  4. While the soup is cooking, place the bacon on to a lined baking sheets, you will need 2 trays. Cook in the oven for 15 – 20 minutes. Once the bacons are nice and brown remove from the oven and the tray. Cool the bacon on a wire rack.
  5. Remove the soup from the heat and blend in a blender or using a hand held blender till smooth. Return the soup to the heat and add in the milk, if you are having ham and pea this is when you add in the ham. Taste, adding more salt and pepper as require. Cook for future 10 minutes then you soup is done.
  6. Serve with candied bacon and crusty bread.
Recipe Notes

Tip with the bacon they go from not brown to burn quickly because of the sugar so do keep an eye on it.
