Pork belly is my favourite cut of pork and that is what I have used in this recipe. The recipe is great with pork loin, chicken, prawns and aubergine. Although it is a stir fried curry without coconut milk it still has plenty of sauce for you to enjoy with a bowl of Thai rice.

  • 500 g pork belly cut to about 2 inches cubes
  • 1 tbsp red curry paste
  • 1 tbsp fish sauce
  • 2 tbsp soft brown sugar
  • 100 ml chicken stock made from stock cube is fine
  • 200 g Fine green beans cut to bite size
  • 2 red chilli thinly sliced for garnish
  • 3 kaffier lime leaves thinly sliced for garnish

  • 100 ml chicken stock made from stock cube is fine

Instructions
  1. As always with Thai cooking have all your ingredients ready to hand. Heat a drop of oil in a wok then add your pork belly. Let the pork cooked for about 10 minutes, to render the fat. Drain any access oil, leaving about 1 tbsp.
  2. Add red curry paste to the wok, cook for 2-3 minutes, till combined with the pork.
  3. Add the green beans, fish sauce and sugar, cook for further 5 minutes. Then add in the stock and give the dish a good stir and taste. Adjust to your liking.
  4. Garnish with sliced red chilli and lime leaves and served with Thai rice.
