Ingredients
  • 500g pork bellycut to about 2 inches cubes
  • 1tbsp red curry paste
  • 1tbsp fish sauce
  • 2tbsp soft brown sugar
  • 100ml chicken stockmade from stock cube is fine
  • 200g Fine green beanscut to bite size
  • 2 red chillithinly sliced for garnish
  • 3 kaffier lime leavesthinly sliced for garnish
Instructions
  1. As always with Thai cooking have all your ingredients ready to hand. Heat a drop of oil in a wok then add your pork belly. Let the pork cooked for about 10 minutes, to render the fat. Drain any access oil, leaving about 1 tbsp.
  2. Add red curry paste to the wok, cook for 2-3 minutes, till combined with the pork.
  3. Add the green beans, fish sauce and sugar, cook for further 5 minutes. Then add in the stock and give the dish a good stir and taste. Adjust to your liking.
  4. Garnish with sliced red chilli and lime leaves and served with Thai rice.
