This quick Teriyaki Chicken is a life saver on a busy weekday.
Let’s be honest here for a second. How much time do we have when we get home with the children to make dinner?
If you are anything like me, I’d walk in with Emj at around 5.30 on a good day and 6.30 if she has clubs.The last thing you want to do is to spend hours cooking a nice meal.
Don’t get me wrong I have nothing against Fish fingers and Chicken nuggets but I don’t really want to be feeding Emj that for dinner every day! That is if she will eat them in the first place.
I know that ready made sauces hardly deserv a place in a food blog or qualify for healthy eating.But, during the weekday and I am tired! It is a life saver. I like to think of it as a halfway point between a good home cooked dinner and junk food.
My favourite go to and Emj’s favourite sauce is Teriyaki (after sweet chilli of course) You can cook anything in this sauce and she will eat it. Whenever I want her to try something new I cook it in Teriyaki sauce. First time Emj had Salmon? It was marinated in Teriyaki sauce. A good trick to get your children to try something new is to make it familiar to them.
Last night was a good example of why I love this sauce. I had busy day at work and I can feel a migraine coming on. We got home at 5.45pm, and I sent Emj up to have a shower and get change.
I put the rice in the rice cooker to cook while I make the rest of the dinner. In one pan I cooked some chicken thighs in teriyaki sauce with sugar snap peas and broccoli. It took all of 20 minutes from start to finish to make dinner. You can check out my blog on How to cook Thai Fragrant Rice too.
Could I have not made the Teriyaki sauce myself? Of course I can! but this is real life and someday we just need that little helping hand so here is my quick Teriyaki chicken recipe.
