Rad Na means “pour on the face” the noodles being the face. Rad Na or Noodles wth gravy is a popular  street food in Thailand. It can be made with any kind of protein or just vegetable. it is a great dish for kids to try. Traditionally you would cook the noodles on its own in a hot wok to smoke it first then make the gravy and pour it over the noodles. I want this dish to be quick and easy weekday dinner for a busy family so I have use straight to wok noodles. This takes 10 mins of your cooking time making it perfect for busy life. Cooking everything in one wok also means less washing up!

I have also left out yellow beans that would normally goes into this dish. I find that it is one of the more difficult ingredient to get in your local supermarket. And the flavour can be a bit too strong for kids to try.Plus I don’t really like them. hehehe

Ingredients
  • 300g chicken breast sliced
  • 4 handfull mix vegetable of your choice cut to small bite size
  • 3 150g pack Straight to wok noodles I used Ribbon rice noodles
  • 3 tbs oyster sauce
  • 1 tbs Soy Sauce
  • 1/2 tbs dark soy sauce
  • 1 pinch of sugar
  • 1 pinch white paper and salt
  • 11/2 tbs corn flour mixed with 1 1/2 tbs cold water
  • 1 clove minced garlic
  • 500 ml boiling water

Rad na Thai Noodle with Gravy
Instructions
  1. Firstly have all your ingredients ready to hand. Add in a drop of oil into a large wok or frying pan. Add in the garlic (careful not to burn it) add in the chicken ensuring that the pan is hot. you want to cook this fast.
  2. Just as the chicken starting to cook add in the vegetables. Once the chicken and vegetable are cooked add in all the sauces and seasoning. Giving it a good stir.
  3. Now add in the boiling water, bring to the boil and taste. making sure you are happy with the flavour adjust as require. Once you are happy stir in the corn flour and water mixture. keep stiring so that it will not be lumpy.
  4. Once the sauce has thicken add in the noodles, stir well to incorporate the noodles into the sauce. Served while hot.
