Slow cooked beef in Red Curry Pie, it must be pie week!
It is Pie Week next week, how exiting is that? A week after Pancake day you get Pie week. March might become my favourite month.

Everyone loves pie and everyone loves curry (or is it just me?) so it is only natural that we would make a curry pie. I have made Chicken Yellow Curry Pie before for my book “Fish Come From The Sky ” (yes I am shamelessly plugging). So I though I would make a slow cooked beef red curry this time and instead of potatoes in the pie I have added rice into it. I know! I am so out there hehehe.

Now, you can make this Pie how ever you wish. eg in a dish with a pastry top (short or puff) or all around pastry. It is down to you, you are the one who is going to eat it and I don’t want say you must make it with puff pastry and you hate puff pastry then that is no good to you what so ever. I think you should be able to be flexible when you are cooking. Maybe this is why I am bad at baking as you have to follow the recipe. I like to think my recipes are your guideline and you should alway adjust it to your taste.

For my Beef Curry Pie I used shortcrust for the bottom and puff or the top because that is how I like it. You can also make these pie a large family sharing size or a small take it to the picnic size, again it is down to you. I tried both and both are great. Well…. I had to make sure that it work so yes, I ate a lot of pie. All in the name of research of course.

The recipe below makes 1 large family pie or 12 little one.

Red Beef Curry Pie

  • 700 g beef cut in to cubes
  • 1 tbs red curry paste more if you like it hot, less if you don't
  • 2 tbs brown sugar
  • 2 tbs fish sauce
  • 3 tbs plan flour
  • 1 400ml can coconut milk
  • 1 beef stock cube
  • 1 large onion sliced
  • 1 lt cooled boiled water
  • 250 g cooked long grain rice
  • 2 ready roll puff pastry
  • 2 ready roll shortcrust pastry

Instructions
  1. First tossed the beef in plain flour and brown in hot oil. Once brown remove and leave to one side.
  2. In the same pan brown the onion then add in red curry paste, sugar, fish sauce and a table spoon of coconut milk (the thick part) cooked till the paste is all soft and mixed in well. Add in the remaining coconut milk slowly, stirring in between.
  3. Add in the beef and water (I added 500ml water first then a bit more as it required). Bring to the boil then turn the heat down low covered and slow cooked it till the beef are tender. This all depend on your beef so I can not give you the time, mine took 3 hours but I did it really low and slow. checking regularly and adding more water to it if you need too. you want have enough of curry sauce in there for when you add on the rice.
  4. Once the beef is tender and you have checked the taste is to your liking leave to cool slightly then add in the cooked rice and mixed well. You can take some of the curry sauce out before you add in the rice to use as extra sauc
  5. Assemble your pie to your liking. My favourite is in the photo. I use shortcrust for the bottom and puff on the top. Lightly greased the muffin tray and line it with shortcrust pastry. Add in the curry mixture then top with puff pastry and brush with beaten egg. bake in the oven (170c) for around 30 -40 minutes until golden brown.
