Slow cooked beef in Red Curry Pie, it must be pie week!
It is Pie Week next week, how exiting is that? A week after Pancake day you get Pie week. March might become my favourite month.
Everyone loves pie and everyone loves curry (or is it just me?) so it is only natural that we would make a curry pie. I have made Chicken Yellow Curry Pie before for my book “Fish Come From The Sky ” (yes I am shamelessly plugging). So I though I would make a slow cooked beef red curry this time and instead of potatoes in the pie I have added rice into it. I know! I am so out there hehehe.
Now, you can make this Pie how ever you wish. eg in a dish with a pastry top (short or puff) or all around pastry. It is down to you, you are the one who is going to eat it and I don’t want say you must make it with puff pastry and you hate puff pastry then that is no good to you what so ever. I think you should be able to be flexible when you are cooking. Maybe this is why I am bad at baking as you have to follow the recipe. I like to think my recipes are your guideline and you should alway adjust it to your taste.
For my Beef Curry Pie I used shortcrust for the bottom and puff or the top because that is how I like it. You can also make these pie a large family sharing size or a small take it to the picnic size, again it is down to you. I tried both and both are great. Well…. I had to make sure that it work so yes, I ate a lot of pie. All in the name of research of course.
The recipe below makes 1 large family pie or 12 little one.
