I like to prep the curry the night before and keep it in the fridge ready for me to start in the morning as I leave the house. 

I have browned the beef first in this recipe but if you do not have time you can just add the beef. 

I used brisket beef in my recipe as I like the way it cooks in a slow cooker. This is my preference, feel free to change to your favourite cut of beef.

Amazing curry to come home to. Just put all the ingredients and leave it in your slow cooker. And come home to a delicious Massaman curry.

  • 800 g brisket of beef cut to about 2 inches cubes
  • 50 g massaman curry paste
  • 1/2 tbsp fish sauce
  • 1 tbsp palm sugar Soft brown is a good substitute
  • 1 400ml can coconut milk
  • 1 cube beef stock
  • 100 ml water
  • 3 tbsp plain flour
  • 1 tbsp olive oil
  • 10 New potatoes

Beef Massaman Curry
Instructions
  1. Tossed the cubes of beef in plain flour and brown in a hot pan with olive oil. This is optional.
  2. Add the beef into your slow cooker with the rest of the ingredients and give it a stir.
  3. Cook the curry in your slow cooker on high for 5 hours or slow for 8 to 9 hours. Optional, garnish the curry with tossed peanut and sliced kaffie lime leaves.
  4. Serve with Thai rice.
