I do not like Avocado. There! I said it. However, this Spicy Creamy Thai Avocado Dressing might just be my favourite thing I have made so far this year.

I wanted to add Avocado to the Thai basic Yum (salad) dressing, I was not sure if it was going to work but it did. Imagine that sour, spicy with a hint of sweetness that you get from a Thai beef salad. That is what this Spicy Creamy Thai Avocado Dressing will give you but with a little bit extra creaminess from the avocado.

It took me no more than 5 mins to make this Spicy Creamy Thai Avocado Dressing in a hand blender. You can have it as a dip or a salad dressing it is perfect for all occasion.

Maybe I do like Avocado after all?

Spicy Creamy Thai Avocado Dressing. Great salad dressing and a perfect dip. Delicious and ready in 5 minutes.
Spicy Creamy Thai Avocado Dressing
Cook Time 5 minutes
Servings
Ingredients
  • 3 cloves garlic - peeled
  • 1-2 bird's eye chilli depending on how hot you like it
  • 1 handfull coriander about 10g
  • 1 ripe Avocado cut into chunks
  • 3 tbs olive oil
  • 1 juice of a lemon
  • pinch of salt, pepper, sugar
Cook Time 5 minutes

Instructions
  1. Add the garlic, chilli and coriander in to the blender and blend till crushed. Then add in the reminding ingredients and blend till smooth. Check that you are happy with the flavour and adjust as require.
  2. Served with salad, grilled meat or as a dip.
