This Spring rolls recipe is a “from my mother to my daughters recipe.” To me, my mum makes the best spring rolls in the world.
Her Spring rolls are filled with generous amount of mince pork and glass vermicelli that you never notice the carrots, onion and cabbage in them. Perfect for fussy eaters.
I remember my mum used to make these Spring rolls in a wok large enough to bath a baby in then she would spend hours wrapping them up, and into the freezer they would go. Ready to be deep fry. Today my freezer is never without them. They cook better from frozen so it is alway good to make them in batches and freeze them. Just fry them up whenever you need.
All the ingredients you will need to make this spring rolls are readily available in all supermarket. A few things you might have issue finding are glass vermicelli. The other is spring rolls pastry. If you live in an area where you have oriental supermarket nearby then great. If not some of the major supermarket do sometime stock them in the freezer section. I have yet to find an online shop that does not require me to order a years worth of shopping for them to deliver it to me.
This is a great recipe to make with your children. From getting all the vegetable ready, soaking the noodles and of course helping to wrap up these delicious spring rolls.
This recipe makes around 30 depending on how big or small you end up rolling them.
