Spring Rolls
Easy homemade spring rolls recipe that is great to cook with your kids.

  • 1 onionthinly sliced
  • 150g grated carrot
  • 150g white cabbageor very finely sliced
  • 100g glass vermicelli noodles
  • 250g pork mince
  • 3tbsp oyster sauce
  • 2tbsp Soy Sauce
  • 1tsp sugar
  • 1pinch ground white pepper
  • 1 eggbeaten
  • 1Lt vegetable oilfor deep frying
  • 1pack spring rolls pastry I used the small pack about 5 inches
  1. First you will need to soak the vermicelli noodles in cold water for about 15 minutes or until soft. Then you drain them into a sieve and using scissors, cut into small pieces about 3-5 cm long.
  2. Heat 1 tbsp of oil in a wok or large frying pan to a medium temperature. Add in the pork mince and fry until nicely browned. Then just add in the rest of the ingredients.
  3. Stir well to combine thoroughly with the mince. You may need to lower the heat during this process to prevent the ingredients from sticking. Have a little taste once it’s cooked and add in more soy sauce, pepper or sugar if you want.
  4. Remove from the heat and leave to cool in a colander or on a baking tray. Now the fun part, rolling the spring rolls. You will need to place a sheet of pastry in front of you in a diamond shape. One corner should be pointing at you. Keep the rest of the pastry sheets wrapped up in a damp tea towel to prevent them drying out.
  5. Spoon the cooled mixture on to the corner nearest you. Leave enough room at the edge to start folding.Make your spring roll by folding the corner nearest you inwards, then fold in the two sides. Roll all the way to almost at the end, make sure you roll it quite tightly.
  6. Use a pastry brush to brush the last corner with a beaten egg and roll to seal. Make sure you leave the sealed side down so that it does not pop open. Keep doing this until you have used all the filling. You can freeze them or deep fry them now it is up to you.
  7. To deep fry the spring rolls you’ll need to heat the vegetable oil in a wok or saucepan to a medium temperature. Gently drop in the spring rolls and fry them until they are golden. You might need to cook them a few at a time, don’t try to cook too many in one go as it will make the oil cool down. Once golden take the spring rolls out using a slotted spoon and drain on kitchen roll. Serve with sweet chilli sauce.
Recipe Notes

Meal prep: You can make the spring rolls ahead of time and freeze. They actually cook better from frozen.

For a vegetarian option try replacing the pork mince with Quorn, or add in more carrot/cabbage.

You can also cook these Spring Rolls in the oven. Spray the spring rolls with oil spray and bake in the oven at 250c for 30 minutes or until golden.
