Stir Fried Chicken with Garlic and Pepper

This Stir fry Chicken with garlic and pepper recipe is a typical meal for children in Thailand. Serve with rice and some fresh vegetables on the side. You can use any protein you like or add some vegetables to the stir fry if you prefer.

  • 500 g chicken breast thinly sliced
  • 5 cloves of garlic peeled
  • 5 black peppercorn
  • 3 coriander roots or about 5 coriander, if you can not get roots
  • 1 tsp Knorr chicken granules
  • 3 tbsp oyster sauce
  • 1 tbsp Soy Sauce
  • 1 tbsp dark soy sauce half if you are using Thai dark soy sauce
  • 1 pinch sugar
  • 1 tbsp vegetable oil

Instructions
  1. First make the paste, pestle and mortar is best for this job but a small blender will be just as good. Crush the black peppercorns once it is crushed, add in the garlic, salt and then chop in the coriander roots. Crush everything together to make a paste.
  2. Put your sliced chicken in a bowl, add in the paste and the rest of the ingredients and give it a good mix.
  3. Heat 1 tbsp of oil in a wok, once the pan is hot add in the marinated chicken and give it a good stir. Cook the chicken at a medium to high heat, stirring occasionally so it does not catch on the wok. When the chicken is starting to brown add about 100 ml of water, a little at a time, to make a nice sauce. Once the chicken is cooked taste that you are happy with the flavour. Then it is done. Serve with steamed Thai rice.
