Stir fried prawns with chilli and Thai basil is normally associated with being very spicy and not at all a dish for a child to eat.
Every time MrM and I would have Chilli basil stir fried dish, Emj always asked if she can try some and I was always reluctant as it is quite spicy.
Then one day I really fancy Stir fried prawns with chilli and Thai basil but was too tired to cook another meal for Emj to have. So I made some adjustment to the recipe and now it is her favorite dish. We cook it with chicken, beef, pork, tofu she loves them all.
I thought I would share with you how I made this recipe suitable for kids but still pack some heat for the grow up. And still only using 1 wok to cook.
It is not that big a secret really. traditionally we would cook this recipe with crushed chilli and garlic in the wok first to release the heat then add in more chilli as you are cooking the dish.
My kids friendly version is, I only fried the crushed garlic (no chilli) and add in sliced red chilli at the very end when you have already turn off the heat. This way if you like it hot, just eat the chilli with it and the kids can avoid the chilli. You will still get a hint of chilli in the dish but not too much.
Emj is now starting to eat some of the slice chilli (without the seeds) she would cut them into small pieces and have a bit at a time.
