Stir - Fry Beef with Chilli and Basil

I think Stir-fry chilli and basil is one of the top 5 popular Thai dishes. Not only in the UK but in Thailand too. It is fast and easy to cook which makes it perfect for weekdays dinner. Honestly it will not take you no more than 20 minutes from start to finish to get this dish ready.

You can use any protein for this recipe. I only used beef because it is my favorite for chilli and basil stir-fry. Mr M prefer chicken, I also like it with prawns. I often make it with fried tofu on my meat free Wednesday. Like I said great with anything. All the ingredients for this recipe is available in all supermarket in uk, my local Waitrose even have fresh Thai basil on their herb stand. If you cannot get Thai basil of any kind then please don’t use western basil. Best to cook it with out the basil.

As it is a fast cooking dish I would recommend that you have all your ingredients and sauce measure out and prep ready to cook. I have said below to put all the sauce in a bowl, the only reason I said this is to make sure you don’t over cooked the meat.   • 300 g thinly sliced beef steak of your choice. I used rump
  • 4 cloves garlic - peeled
  • 4 bird's eye chilli please adjust to your taste
  • 2 red chilli - sliced
  • 50 g Thai basil - de-stalked
  • 1 onion - sliced optional
  • 2 tbs oyster sauce
  • 1/2 tbs Soy Sauce
  • 1/2 tbs dark soy sauce
  • 1/2 tbs fish sauce
  • 1 tsp sugar
  • 1 tbs vegetable oil for frying

Stir - Fry Beef with Chilli and Basil
Instructions
  1. Firstly prepare all your ingredients. I normally have them all in one plate. Your sliced beef, onion or any vegetable you are using, de-stalked your basil. Measure all the sauce and sugar and have them in a bowl ready.
  2. in a pestle and molta crush the garlic then add in the bird’s eye chilli and give it a good crush.
  3. Add about 1tbs of oil (any) into the wok then put it on to high heat. Before the pan gets hot add in the garlic and chilli paste. This is not the traditional way to do it. You would have the wok a bit hot if you were cooking it in a Thai kitchen, which is outside the house! You try to do that indoors and you will spend the next 5 minutes sneezing. I prefer to add into a cold pan and let it heat up till you can start to smell the garlic and chilli cooking.
  4. Quickly add in the beef, give it a quick stir and leave it to cook. Should not take more than 2 minutes. Add in all the sauce and onion (if use) as soon as you can see that the beef has started to cook. Give the dish a quick stir-fry, add in about 3-5 tbs of water so that you will have some sauces. Taste and adjust to your liking.
  5. Add in the red chilli and basil, turn off the heat and give it one final stir. That is it guys, it is that simple.
