Stir fry chicken with chilli and Thai basil

Who does not love Stir Fry Chicken with Chilli and Thai Basil ? No one. This is recipe if one of my comfort food. And is now EmJ favourite dinner.

Stir – Fry Chicken with Chilli and Thai basil is really easy to cook recipe which makes it perfect for weekdays dinner. If your child do not like spicy food than leave out the bird eyes chilli and the red chilli. The way we make it for Emj is leave out the bird eyes chilli and only add in the sliced red chilli at the very end. This was the chilli are there for us and it is not too spicy for her but at the same time she feels like she is all grown up and eating a dish with chilli in them. its a win win. If you do not like chicken you can also make it with beef or prawns.

Stir- Fry Chicken with Chilli and Basil

  • 650 g chicken breast fillets about 3 large breast - thinly sliced
  • 2 cloves garlic peeled
  • 2-3 bird eyes chilli depending on hot hot you like
  • 2 onion sliced
  • 1 handfull Thai basil
  • 2 red chilli sliced
  • 3 tbsp oyster sauce
  • 2 tbsp Soy Sauce
  • 1 tbsp fish sauce
  • 1/2 tbsp dark soy sauce
  • 1 tsp sugar
  • 100 ml water
  • 2 tbsp vegetable oil

Instructions
  1. Firstly prepare all your ingredients. Sliced chicken, onion, chilli and de-stalked your basil. Measure all the sauce and sugar into 1 bowl and have them ready.
  2. in a pestle and mortar crush the garlic then add in the bird’s eye chilli and give it a crush. You can chop it if you do not have a pestle and mortar.
  3. Add oil into the wok, then put it on to high heat. Before the wok gets hot add in the garlic and chilli. This is not the traditional way to do it. You would have the wok a bit hot if you were cooking it in a Thai kitchen, which is outside the house! You try to do that indoors and you will spend the next 5 minutes sneezing. I prefer to add into a cold pan and let it heat up till you can start to smell the garlic and chilli cooking. - leave out this step if you are cooking for children.
  4. Quickly add in the chicken, give it a quick stir and leave it to cook, stirring occasionally. Should not take more than 5 minutes. Add in all the sauces and onion. Give the dish a quick stir-fry, add in water so that you will have some sauces. Taste and adjust to your liking.
  5. Turn off the heat, add in the red chilli and basil, and give it one final stir. So simple and So Delicious. I like to serve with Thai rice and fried egg on top.

Recipe Notes

Note: If your child do not like spicy food than leave out the bird eyes chilli and the red chilli. Meal Prep: prepare all the ingredients the night before, all you have to do then is stir fry in on the day. 10 minutes and dinner is ready.
