For the chicken
  • 4 chicken partsI use thigh and leg
  • 1tin pineapple chunks434g / net 200g
  • 2 onionquartered
  • 12 small tomatoes
  • 2 carrotssliced
  • 2 green pepperscut to bite size
  • 2tbs olive oil
For the sauce
  • 50ml ketchup
  • 1/2tbs siracha
  • 100ml juice from the tin pineapple
  • 1tbs Soy Sauce
  • 1tbs fresh gingercut to small match sticks
  • 1tbs Honey
  • 1tbs white wine vinegar
  • 1tsp crushed garlic
  • 1pinch salt and pepper
  1. Preheat the oven to 200c.  Rub the olive oil on the chicken and place it on a tray big enough to have all the ingredients in. Cook for 30 minutes.
  2. turn the oven down to 180c. Pour the sauce over the chicken and add in the prepare vegetable apart from the pineapple. Cook for 20 minutes.
  3. Pour the rest of the sauce all over the chicken and vegetable and add in the pineapple. Bake for 10 more minutes Your sweet and sour chicken is now ready to serve. Why not try it with some Egg fried rice.
