Spiced with Thai red curry these Sweet corn and Butternut squash fritters and great for all occasion.

Ingredients
For the Fritters
  • 150 sweet corn I used tin
  • 200 g butternut squash grated
  • 1 tbsp Thai Red curry paste
  • 1 tsp sugar
  • 100 g plain flour
  • 100 ml water
  • 1/2 tsp salt
  • vegetable oil for frying
For the dressing
  • 100 g greek yoghurt
  • 1 tbsp Honey
  • 30 g coriander chopped

For the Fritters
  • 150 sweet corn I used tin

  • 1 tsp sugar

  • 100 g greek yoghurt
  • 1 tbsp Honey
  • 30 g coriander chopped
Sweet corn and Butternut Fritters
Instructions
  1. Fry the red curry paste in a drop of oil to release the flavour, about 1 minute. Make sure to do it on low heat so is not to burn the paste. Put the paste into a bowl with the rest of fritters ingredients and give it a good mix.
  2. Spoon the mix in to a frying pan with a drop of oil just so that the fritters don’t stick. Fry the fritters till golden brown turning as require. I used 2 teaspoon to do this with so that they are bite size.
  3. Mix all the dressing ingredients together. Serve the fritters top with a teaspoon of the honey and yogurt dressing. Told you it was easy.
