Thai Beef Salad
My take on the fab Thai beef salad, simple and easy to make. perfect recipe to share with family and friends.

  • 2265g steaksI used Rump
  • 2tbs oyster sauce
  • 1tbs olive oil
  • 3tbs olive oil
  • 4tbs lemon juicefresh please
  • 3-4 small chillidepending on how hot you like
  • 2tbs soft brown sugar
  • 3clove garlic
  • pinch of salt
  • handfull corianderuse all the stalks and half of the leaves
  • 1 red onionthinly sliced
  • 1/2 pomegranateseeded
  • 20 small tomatoesmixed colours
  • remaining coriander
  1. Marinate the steaks in oyster sauce and olive oil for a few hours or overnight.
  2. Make the dressing by blending all the ingredients together apart from the olive oil in a blender. Add in the olive oil at the end and give it a mix. Taste and adjust as require
  3. Cook the steaks to your liking, once cooked cut the steaks into large strips, 3-4 pieces out of each steaks.
  4. Marinate the warm steaks in the dressing for at least half an hour or longer.
  5. While the steaks are marinating, cook half of the tomatoes in a hot oven (180C) with a sprinkling of olive oil. You just want the tomatoes to roast lightly.
  6. Assemble the salad together by placing the steaks on a dish then pour over the marinate. Dress with the roasted tomatoes, fresh sliced tomatoes, pomegranate seeds, red onion and coriander leaves.
Recipe Notes

You can prepare up to stage 5 and dress the salads as and when you need.
