Thai Green Beef Curry! About time!! I hear you say. So many of you have been asking me for a simple Thai Green Curry recipe, so here it is.
I know some of you are going to ask why am I not making my own curry paste? I could say it is because I do not have the time. But honestly I have never even try to make one. Apart from my mum, I do not know of another Thai person who make their own curry paste.
Every Thai restaurant I have ever worked in have always buy ready made curry paste. They do have their favourite brand and will not change from it but never have they made it fresh.
The trick is to freshen (I think that is a word?) the ready made curry paste to make it taste homemade and fresh. What you need to do is very slowly fry the curry paste in some vegetable oil. You will be able to smell the paste comes to life and the colour of the paste changes.
There is no need to be ashamed in using ready made Thai curry paste. Authentic Thai curry paste require ingredients like Kaffir lime rind, galangal, shrimp paste which are not easy to fine in most supermarket.
It is lovely if you can make your own curry paste, I prefer the ready made.
