Thai mixed seafood with garlic pasta is my take on the popular Spaghetti Marinara.

You can make this dish as homely or as fancy as you like by changing the seafood you are using. The seafood I use here is just a guide line. You can use anything you like or whatever you can get your hands on. I would recommend things that will take about the same amount of time to cook. Fish is not great for this as it will flake and fall apart when you stir fry it.

This is a fast cooking dish so make sure you have all the prep done before you start to cook.

The recipe is so easy and quick to make that it’s perfect weekday dinner.

  • 12 Raw king prawns deveined and shelled
  • 6 baby squid clean and cut to bite size
  • 4 scallops clean as require
  • 4 cloves garlic - peeled
  • 2 black pepper corn
  • 3 coriander roots or a good pinch of the stems.
  • 1 pinch coriander chopped
  • 1/2 tbs fish sauce
  • 1/2 tbs sugar
  • 2 tbs oyster sauce
  • 1 tbs Soy Sauce
  • 1 tbs olive oil
  • 300 g spaghetti  cooked to al dente
  • 3 tbs water
  • 1 tsp sugar

Thai Mixed Seafood with Garlic Pasta
Instructions
  1. First make the paste by pounding together the garlic, pepper and coriander roots in a pestle and mortar. Prepare all your seafood making sure they are cleaned and deveined as require.
  2. Heat up the wok with the oil and add in the garlic and pepper paste stirring quickly to make sure you don't burn the paste.
  3. Add in the prepared seafood, fish sauce, oyster sauce, soy sauce, water, sugar and cook for 3-5 minutes until it is cooked through. Please make sure not to overcook your seafood. Check the flavour, it should be garlicky and salty. Toss in the spaghetti and chopped coriander at the last minute. And serve! Delizioso
