Vincents’ Chilli Chicken Noodles

Vincents’ Chilli Chicken Noodles, I hope, will be first of many recipes that I will be teaching this young man to cook. This Chilli chicken noodles recipe is based on Stir fry Chicken with chilli and basil.

Vincent is a son of a very good friend of ours, who loves food. He loves trying new things and asked if he can learn how to make this Chilli Chicken Noodle dish that I made for him once on a family holiday together at this cute little place in Cornwall.

He enjoyed prepping all the vegetables for the recipe and was very comfortable and confident using a knife. In fact he was very good in the kitchen. I did have to help stir the noodles once all the ingredients were in the wok as it did get very heavy.

I made a few other dishes for everyone to eat along side Vincents’ Chilli Chicken Noodle Recipe and he loved all of them. We had Chicken lettuce wrap, sticky rice and a very spicy Som Tum. He ate everything!

I do strongly believe that if you show/guide kids to love food they will eat well, and Vincent is definitely proof of that.

A great first recipe for kids to try and the whole family to enjoy.
Chilli Chicken Noodles

  • 400 g chicken breast fillets thinly sliced
  • 5 spring onions sliced
  • 1 red pepper sliced
  • 150 g mangetout sliced
  • 2 medium carrots sliced
  • 200 g dried fine egg noodles
  • 2 red chilli optional
  • 2 tbsp vegetable oil
for the sauce
  • 4 tbsp oyster sauce
  • 2 tbsp Soy Sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 1 tbsp fish sauce
  • 100 ml water

Chilli Chicken Noodles
Instructions
  1. Firstly cook the noodles in boiling water for 1 minute. Then rinse in cold water to stop the noodles from cooking further. Toss with a bit of oil so that they will not stick.
  2. Then prep all the ingredients. Making sure you slice everything ready and that all the vegetables are similar sizes, so that they will cook at the same time. Have all the ingredients ready and easy to reach.
  3. In a bowl add in all the sauce ingredients together apart from the water. Now that the prep is done lets cook.
  4. Heat the wok with half of the oil to medium heat. Once hot add in the sliced chicken. Stir every so often, once the chicken is cooked through then pour the sauce all over. Rinse the sauce bowl with the water and add to the wok.
  5. Add in the noodles. Give it a good mix. Then add in all of the vegetables and give it a good stir to get the sauce, vegetables and noodles all mixed. Tip: you can turn the heat down to mix then up again to heat and cook through.
  6. Once the noodles are hot and cooked through remove from heat and serve.
