Yellow Curry Gnocchi
A mild Thai Yellow Curry with Gnocchi recipe. The ultimate comfort food that is perfect for the cold days or any day really!

Ingredients
  • 2 chicken breastsliced
  • 1tbs Thai yellow curry paste
  • 1 onionsliced
  • 1400ml can coconut milk
  • 1cube chicken or vegetable stock
  • 15g palm sugar
  • 1tbs fish saucesoy sauce for vegetarian
  • 250g fresh gnocchi
Instructions
  1. Fry the curry paste in a saucepan with a bit of the coconut milk. use the thicker part first. Adding in a bit of coconut milk at a time to make sure the paste does not burn. You are looking for a nice shine from the coconut milk.
  2. Once you have added about 5 tbs of the coconut milk then add in the palm sugar, stock cube and fish sauce. Cook till the sugar has resolved.
  3. Add in the chicken, once the chicken has started to cooked pour in the rest of the coconut milk. Bring the curry to the boil then simmer for a few minutes. in the mean time cook the gnocchi as per instruction less 1 minutes.
  4. Add the onion to the curry. Check that you are happy with the flavour, adjust as require (adding some water is it is too thick for you.) Once you are happy with the flavour add in the gnocchi and cook for a minute. Served immediately. Yummy
