Sweet corn and Butternut Squash Fritters.
My second canapés from my 12 days of canapés till Christmas. This Sweet corn and Butternut squash is so easy to make and very affordable.
When I was putting plans together for these canapés I wanted to make sure that they were all easy, affordable and delicious. These fritters are definitely all of those things. You could make the fritters up ahead of time and keep them warm in a low heated oven but they are great cold too.
You will need: Makes 24
150g Sweet corn (I used tin)
200g Butternut Squash – grated
1tbs Red curry paste
Oil for frying
100g Greek yoghurt
30g Coriander – chopped
Fry the red curry paste in a drop of oil to release the flavour, about 1 minute. Make sure to do it on low heat so is not to burn the paste.
Put the paste into a bowl with the rest of fritters ingredients and give it a good mix.
Spoon the mix in to a frying pan with a drop of oil just so that the fritters don’t stick. Fry the fritters till golden brown turning as require. I used 2 teaspoon to do this with so that they are bite size.
Mix all the dressing ingredients together. Serve the fritters top with a teaspoon of the honey and yogurt dressing.
