Mini Jackets Potatoes are a great thing to serve as canapés. They are quick, easy and affordable to make.
You can have any topping you wish. Chilli Con Carne, cheese and bacon, chicken curry, peanut sauce or even smoked salmon.
I have made selections of them for my canapés (because I like to make life harder! But you don’t have to) or you could just make do with one flavours.
If you speak to Mr M he would tell you that I never throw leftovers away. It always goes in to a box and into the freezers saved for rainy day. So I do have a selection of topping I can use for my mini Jackets canapés. This is why you never throw food away, you never know when it will become handy.
You will need:
Small new potatoes – smaller the better.
A drop of Olive oil
Pinch Sea salt
Your choice of topping. I had cheese, sour cream and crispy bacon bits and my slow cooked fruity lamb red curry I had leftover.
give the potatoes a good wash and place the potatoes, sea salt and olive oil together in a bowl and give the potatoes a good coating. This will help the skin to crisp. Place the potatoes on a tray and into an oven 180c for about 45 mins or until it has cooked through and the skins are nice and crispy. All depends on the size of your potatoes.
Once done just cut across the top of the potatoes and topped with topping of your choice.
And you are done.
